This has probably been asked before, although my search came up empty.

I'm looking to programmatically assign the values for mac_wan and mac_wl then nvram commit the values via shell script. I have the basics down such as "service wan restart", although I'm not changing anything or writing values to the nvram, which the advanced mac properties stuff obviously does; knowing me I'd brick my antique modem trying it —

~ Any help on the matter would be greatly appreciated.

The syntax for the nvram command can be found with
    nvram --help
In particular, an nvram value can be set thus:
    nvram set foo="bar"
Setting some nvram values can be risky, as this may create unrecoverable inconsistencies.
