    Hi all,
i would change the currently wireless channel from 11 to 6 or 1, but when i change it from my Apple devices (imac, mbpro, iphone and ipad) i cannot see the network, seems that the SSID is not broadcasted. If try to connect by typing manually the network name but without luck.
    What could be the problem?

Did you erase the nvram after flashing Tomato?

I have had iDevices corrupt Tomato because the submit gets truncated by mobile Safari. I know an iPad 3 running iOS 6 & up will work fine but iDevices with less RAM have some pretty severe browser constraints. Once corrupted the only sure-fire way to get it back to functional is to erase nvram and setup the router by hand (obviously not using the iDevice that caused the problem in the first place). A Mac should be fine, though I prefer using Firefox for neutrality's sake.

Have you adjusted the country (Advanced -> Wireless) for the wireless radios to match your local country? Unlikely to make an effect but worth a try.
