How to monitor traffic to design QOS rules?

    Hi, I'm new to QOS and I've been following this excellent QOS tutorial here.

    One thing that is not making sense to me is why do we use a trial-and-error approach for setting up QOS rules; why can't we just monitor and log network traffic during peak hours, analyze the data to find out which traffic types (ports, protocols, transferred size) is hogging the bandwidth, and design QOS rules to reprioritize it. This seems to me as the logical approach, but I can't find any tutorials doing this, or any discussion on how to accomplish it. what am I missing? BTW, I run AsusWRT-Merlin if it is any help.
