Since I upgraded to Alchemy-V1.0 v3.37.6.8sv I've noticed I have a lot of incomming UDP Port 68 packets inbound to the router - should I be concerned about this? Is there anything specific I need to do to explicitly prevent any inbound traffic from seeing ports on the router?

Are you on cable by any chance? This is most likely your local UBR is using this for broadcast DHCP or your ISP's DHCP server(s) for your area, for DHCP and ICMP.

Alchemy probably logs more than your last firmware did. why you still using such and old firmware however is beyond me,

    Which firmware?

DSL - you are probably right.

I thought I had the most current free sveasoft firmware - is there a different one I should try?

yeah alchemy is free firmware but HyperWRT and DD-WRT firmwares are tbh far better since they are built on new source code that has many security fixes.

if you are updating the firmware i would reset the router first, then upgrade to the official linksys firmware first, before moving to HyperWRT or DD-WRT firmware.
