what other uses are there for the serial port besides console? Console is the only use I've found on the net which leads me to the question of why add 2 serial ports when 1 is more than sufficient for a console?

Well, if you install open-wrt as firmware, your box will work almost as a PC with a very small linux distro. With a DTE com port you can add other devices to your box, just as on your PC. You can hook up a printer - congratulation, you have a printserver. You can add a infrared remote and use your box as a mp3 player, with a LCD display connected to the second com port. Etc. etc.
