Currently, I own a v1 WRT54G and have the option of swapping it out for a v5. What I'm wondering is if I go ahead and swap them out, will I gain anything (or loose) out of the v5 that I don't already have in the v1, and if the swap would be worth it.

The WRT54G v5 and v6 run VxWorks and can't be upgraded "easily" with 3rd party firmware. Stick with your v1!

With v1 you can use the full version of dd-wrt...with v5 just the micro version... stick with your v1...!:) never change it for a v5/v6...
